This is one of my favorite meals! It is so simple to make and tastes amazing every time!
- 2 cobs of corn
- 1/2 avocado
- 2 cartons cherry tomatoes
- 1-2 stalk spring onion
- 2 ripe mangoes
- 1-2 heads of romaine or cos lettuce
- hand full fresh basil
- handful of fresh Coriander
- juice of 1 lemon
Wash the lettuce leaves and leave them to the side to dry off.
Mash the Avocado into a large bowl.
Cut the corn off the cob and add it to the avocado. Finely chop the spring onion, cherry tomatoes, fresh basil and coriander and add to bowl. Add the lemon juice. Mix together well.
Peel the mango and chop up into squares. Add to the bowl.
Use the lettuce leaves as the ‘taco’ and fill it with the tasty filling. Yum!
