Beet, Zucchini and Avocado Salad

This is one of my favorite salads especially when feel like something a bit heavier as it is lovely and mooshy!!! Sometimes I make the mix and use the lettuce leaves as the tacos! Try both and see which one you like best.


  • 1-2 heads romaine lettuce or mixed leaves
  • 250g cherry tomatoes
  • 1-2 zucchinis, grated
  • 1-2 sweet baby beets, peeled and grated
  • ½ avocado, peeled and mashed
  • 1 spring onion, finely chopped (optional)


Break the leaves and place in large bowl. Massage the avocado into the leaf mixture.Add grated zucchinis and finely chopped spring onion. Massage again so it starts to go mooshy! Add beet and tomatoes. Mix well together.
